I Wanna Baklava Breakfast Bowl

Excuse the deluge of cinnamon…it was one of those mornings where I just wasn’t feeling it. Everything seemed to be taking too much effort. But I still wanted to fulfill my part of the breakfast making routine I have with my partner.

 

Every morning my partner washes 1/2 a head of curly kale for me to make a breakfast salad. To return the favor I whip up some quinoa flakes with pepitas, raisins, rice milk, cinnamon, and passion fruit. It is really really simple….but It felt like too much effort to boil breakfast cereal on the stove. Yep…can’t really give you a good excuse for that.

 

Insert this breakfast idea to save the day! 5 ingredients & a microwave. Less than 5 minutes. Breakfast is served. Now you can always make this on the stove, but the point of this lil lovely recipe is to make something delicious and healthy for your soul without a lotta effort. I show my love through cooking and food. And this was just my way of showing my partner I love him that morning even though I was really exhausted.

 

Wanna Baklava Breakfast Bowl

Serves 1

 

Ingredients:

~1 cup rice milk + 1/8 cup water

~1/2 cup quinoa flakes

~1-3 tablespoons agave or maple syrup or honey

~1/4 cup toasted & chopped pistachios

~Cinnamon to taste

Directions:

1) Place rice milk, water, and quinoa flakes in a microwave safe bowl. Microwave for 30 seconds. Stir with a spoon. Microwave for another 30 seconds to 1 minute. Stir. Option to microwave for another 30 seconds if you want your hot breakfast cereal to be a lil thicker.

*OR*

Follow the instructions on the quinoa flakes if you prefer to make this on the stove top.

2) Top with sweetener, chopped pistachios, and a sprinkle -or deluge- of cinnamon.

3) Serve hot ‘n’ fresh and enjoy
